2016 Davis Bynum Chardonnay Duo

Winemaking Notes

2016 Davis Bynum Chardonnay
1 - Magum 1.5L
1 - 750mL

Our 2019 Virginia's Block Sauvignon Blanc opens with bright grapefruit and quince notes, with lime and savory herbal tones in the background. The body is surprisingly supple, with vibrant acidity which creates a contrast on the palate, with a richness, and sweet and sour flavors vying for control. The flavors continue on through the finish aided by the return of the grapefruit and quince notes with lingering citrus zest. Enjoy this wine with tangy soft or hard cheeses, pickled beet salad, oysters, salmon or shellfish, or anything your heart desires.

Deep in the heart of the Russian River Valley, we have a five acre gem of Sauvignon Blanc. As a tribute to Davis Bynum's second love, we named the five acres Virginia's Block. The vines are planted in east-west rows in shallow gravelly Huichica loam. The vines are cane pruned and trained to open up the canopy to allow the sunlight to touch the fruit. These fruit clusters turn golden through harvest, as the flavors become fully mature.

In order to highlight the fruit character and complexity of Virginia's Block we fermented this vintage with four different yeast, and used three different types of fermenters. Most of it was fermented in 3 to 4 year old French oak barrels (51%) which imbues a subtle richness to the wine with very low oak flavor. Secondarily, stainless steel drums (41%) were used, which highlights fresher acidity and fruit aromas, while a small portion (8%) was fermented in Acacia puncheons for a twist of citrus and floral character. To preserve the fresh acidity, Virginia's Block did not go though malolactic fermentation. The finished blend was gently fined and bottled unfiltered to leave the wine with as much flavor and aroma as possible.
