Winemaking Notes

Rich with aromas of brown sugar, plum and baking spices with flavors of dusty oak, plum and cherry with firm tannins and a long, smooth finish. Perfect when paired with a New York strip steak, grilled cheese with caramelized bacon or even a classically smoky pulled pork sandwich.

History

For our 2017 Reserve Cabernet Franc, select areas within each vineyard are hand harvested, fermented separately and aged in the finest French oak. After six months, each lot is tasted and graded and only the best are considered. The blend is then assembled, and the wine is returned to barrels to facilitate flavor integration. The wine is aged an additional 24 months before bottling.

The Vineyards

Early winter showers with a fair amount of rainfall were followed by a warm, dry spring in 2017. Alternating overcast days and heat waves continued through spring and summer, with a warm July and August. Cool mornings in mid to late August helped to preserve acidity while warm daytime temperatures led to perfectly ripe fruit with harvest starting September 16 and ending October 20.
